It's bright, well balanced and a flavor bomb of a soup! A perfect fall soup.

What is Borscht? A forged soup of course! The word borscht is Yiddish, but it derives from the Slavic word for the hogweed plant (now known as parsnip). This plant would have been a regular, vitamin-packed part of the diet of roving Slavic tribes. Borscht, these days, is a good deal more elaborate than those Slavic tribesmen. Beets are the centerpiece, but they are enriched with garlic, onion, fresh dill and spices.
